Anzac biscuits

This recipe makes about 10-12 biscuits, depending on the size of your spoonful. You can add white chocolate to the biscuits, dunk them in chocolate or add almonds, cinnamon or apricot. The choices are endless, but any variation will change the nutritional value. The grams and kj are written down for one biscuit.

1) Preheat a fan forced oven to 160°C.
2) Grease or place a piece of baking paper on 2 oven trays.
3) Pulse macadamias and cranberries in a food processor for about 30 seconds.
4) Combine sugar, flour, oats, coconut, pulsed macadamias and cranberries in a large bowl.
5) In a small saucepan combine butter, golden syrup and water, stirring constantly over a medium heat until the butter is melted.
6) Take the pan off the heat and stir in bicarb soda.
7) Stir this wet mixture into the dry ingredients and mix well till the ingredients combine.
8) Place a round tablespoon of mixture on a greased oven tray, flatten a little and bake for 15 mins.
9) Then let cool on the tray for about 5 mins before transferring to a wire rack to cool completely.
