Ginger nut biscuits

This recipe makes about 20 biscuits, depending on the size of cutter you use. A serving suggestion is to dunk the cooled biscuits in melted chocolate. The grams and kj are written down for one biscuit.

1) Preheat a fan forced oven to 160°C.
2) Grease or place a piece of baking paper on 2 oven trays.
3) Cut the block of butter into small chunks and let soften (or microwave on low for 20 seconds).
4) Beat softened butter and sugar in medium bowl with an electric mixer until light and fluffy (5 mins).
5) Stir in the treacle and mix through.
6) Mix the dry ingredients together, then add the dry ingredients in 3 small batches, till just combined.
7) Turn the dough onto a lightly floured surface and using your hands kneed the dough to combine fully, (you may need to add more flour as you go to stop the dough sticking to the surface).
8) Roll out to about 5 mm thick and cut with a cookie cutter.
9) Place the cut discs onto the oven trays and bake in the oven for 18-20 minutes.
10) Let cool on an oven tray for about 5 mins before transferring to a wire rack to cool completely.
